Set in a stately 18th century house in Flanders, De Kermeliet is one of the most respected restaurants in Belgium, serving up timeless French classics alongside an unforgettable Asian-fusion menu.
The chef patron, Geert Van Hecke welcomes his guests into his modern style restaurant which is designed to make diners feel comfortable and at home.
The son of a baker, Van Hecke was baking bread by the age of 12 and on discovering his passion for cuisine he entered college in Koksijde and followed up with an apprenticeship with Alain Chapelle in Lyon.
On returning the Flanders and setting up De Karmeliet, Van Hecke has become a culinary legend in Flanders, well-respected for his unorthodox and daring cooking style.
While his contemporaries serve up dishes "the size of my thumb", as Van Hecke puts it, his aim is to be generous in his portions.
"We have to be generous if we want our clients to have the time to appreciate what they're eating."
