Restaurant Description
St John is one of the officially one of the UK's best restaurants and is situated in the heart of London next to the famous Smithfield Market. The market was known as the oldest livestock market in London, dating back to around the 10th century, before the main livestock trading was moved out to Islington in the mid-1800s. Perhaps in homage to the market's heritage, the cuisine at St John is known as "nose to tail eating", as the restaurant specialises in all things carnivore, with a particular devotion to offal and rare cuts of meat.
Fergus Henderson, Trevor Gulliver and John Spiteri opened St John in 1994 in an old Georgian building which had fallen into disrepair since the 1960s. Henderson takes the helm as head chef and has introduced his pared-down simple cooking style to London.
The building on St John Street hosts a restaurant and bar which Henderson took much part in designing, being the child of two architects and a would-be architect himself. The simple, white finish gives a sleek, modern finish to the dining experience. In 2003 the bakery operation was moved from the chimneys of St John Street to London's Spitalfields Market, and is known as St John Bread and Wine.
