Restaurant Description
Thornton's is one of Dublin's culinary gems and with a large number of customers becoming regulars of the restaurant, the chef owner Kevin Thornton must be doing something extra special. Starting life as the Wine Epergne in 1990, the restaurant attracted rave reviews for the chef's daring and uncompromising approach to the plate. The canalside restaurant has a classic elegance to it which is echoed throughout its exquisite dining room, private dining area and canapé lounge.
Coming from a family of nine children, the young Kevin spent summers working on his uncle's farm and soon found what interested him: "I was fascinated with how things were transformed with nurturing - from a seed to a vegetable or a calf to a cow.''
Thornton leanrt his trade in numerous kitchens around the world, taking in the sights of France, Switzerland and Canada as he went. His most famous apprenticeship was undertaken at the famous Paul Bocuse's three star restaurant in Lyon. He later became the first Irish chef to achieve two Michelin stars and he is fully on top of his game, becoming a champion of Irish cuisine.
As well as master chef, Thornton is also a talented photographer and some of his framed works, taken from his book Food for Life adorn the walls of the dining room.
